Preparation time: 20 minutes


Ingredients for 10 rolls:

200 ml water

150 g cucumber

150 g carrot

150 g bell pepper

150 g soft tofu

100 g dry rice noodles (angle hair)

50 g rice paper

2 g salt


Optional sauce:

tbsp soy sauce (extra 8,5 kcal)

tbsp sweet chili sauce ( extra 27 kcal)


Directions:

Take the vegetables, wash them and then peel and chop. You could grate the vegetables, but they are crunchier if you use just a knife. Cut them into long strips. Heat your pan and put a pinch of salt on the pan. When the pan is hot put your soft tofu on it. Fry till tofu is golden from outside, but soft inside. Turn off the heat and set your tofu on a plate to cool down. Now take a pot and put water in it. Put the heat on. When you see that water is boiling, turn off the heat and put rice noodles in it. Let the noodles sit in warm water for about 5 minutes. Then strain the water and rinse the noodles with cold water. When noodles are cooled down, set them on a plate. Fillings should be ready now, so start making your rolls. Take a plate with warm water. Put rice paper in it for 1 minute, you can see that it's getting softer. Then take rice paper out, put it on a cutting board and add your fillings. I like to put noodles first, then tofu and then cover it with vegetables. Rolling the rice paper can seem hard, but it comes with time. First, cover the vegetables with rice paper from the edge that's nearest to you. Then take in the sides from left and right. Now roll till the end. Because the rice paper is wet, it will glue itself together. Take another rice paper and repeat the process until you have done all the 10 rolls. Let's make the sauce. Take a bowl to add soy sauce and sweet chili in it, mix well. Take your roll to dip it in a sauce and then just take a bite. Enjoy those lovely rolls with a friend!
