Health benefits of tomatoes: * Lycopene - the most abundant carotenoid in ripe tomatoes - is particularly remarkable for fruit plant compounds. It is found in the highest concentration in the skin. In general, the redder the tomato, the more lycopene it contains. * Consumption of tomatoes and tomato-based products has been associated with better skin health and a lower risk of heart disease and cancer. * Heart disease, including heart attacks and strokes, is the leading cause of death in the world. A study in middle-aged men associated low blood levels of lycopene and beta-carotene with an increased risk of heart attacks and strokes.

Ingredients: 2 kilos of tomatoes 1 pepper 50 g of cauliflower 1 large onion 3 cloves of garlic 2 tablespoons oil 1 teaspoon black pepper 1 teaspoon salt 1 teaspoon lemon juice

Preparation: Wash clean cauliflower, tomatoes and peppers. Chop tomatoes, peppers, cauliflower, onions and garlic. Place them on the baking tin. Pour over oil and shake over salt and pepper.

Mix everything well. Preheat oven to 180 C. When the oven has reached the desired temperature, place the oven plate in the oven. Bake the tomatoes in the oven for 30-45 minutes. Then close the oven, but let the tomatoes cool in the oven for at least half an hour.
