Spicy vegetable curry with homemade naan

Vegetable Curry with homemade Naan

Preparation time: 30-40 minutes

Ingredients for Curry:

70 g boiled rice (unboiled is about 35 g)

200 g vegetables (I used frozen broccoli, carrot, cauliflower, beans, spinach)

40 g boiled red lentils ( about 30 g unboiled)

30 g tomato paste

10 g of oil

5 g nutritional yeast

2 g salt

Optional: cayenne pepper 10 g


Ingredients for Naan (about 2 naan or 1 big):

40 g flour

150 ml water

10 g oil

3 g salt


Optional topping:

Basil


Directions:

The amount in the recipe is for one, so if your enjoying this delicious meal with your friend/friends then go ahead and double or tripple the recipe for your liking. First boil the rice. Boiling rice is easy. I wash rice 2 or 3 times. Then add rice into the pot and 3 cm more water then rice in the pot. Heat your pot and when the rice starts boiling lower the heat to simmer. Put the lead on and then let it simmer, about 25-30 minutes. Then take a big pan and start frying your vegetable and lentils in oil. We put lentils at the same time as vegetables, because vegetables are still frozen and then we have enough time to cook the lentils( it takes about 10 minutes). Now we have time to make the naan. Add to your bowl flour, salt and mix well. Then add oil, mix again. Now, little by little add water to see if you need more or not. The dough should be similar to pizza dough. Heat your pan on medium heat and then roll the dough into a round pancake-like shape. Don't put oil on the pan. Just add your naan to heated pan and cook from each side about 1-2 minutes. Then check your other pan with vegetables. When vegetables are cooked and lentils look ready then add the tomato paste. Cook 5 more minutes and then add it all to the food processor. Mix well so you will have nice curry paste. Then add nutritional yeast, salt and cayenne pepper( optional). Your rice should be ready. Add some salt and stir. Take a nice plate, put a cup full of rice on the one side and your amazing curry to the other. Top it with a little basil leaf. Enjoy it with your fork or if you are into trying something new, then eat with your hands.
