Preparation time: 20 minutes
Ingredients:
120 g cooked white beans
80 g cooked quinoa (or 27 g uncooked quinoa)
70 g cucumber
70 g bell pepper
35 g green olives
30 g avocado
10 g jalapeno
3 g lemon pepper
2 g salt
Optional toppings (which is included in the calories, if you leave it out then -6 kcal):
3 g vegan mayo
Directions:
First, rinse the quinoa. Pour the quinoa into a fine sieve and rinse under running water. Drain it well. Set the quinoa in a pot with water. You will need 1 part of quinoa and 2 parts of water (27 g quinoa and 60 ml of water). Turn the heat on and boil 10 minutes. Then turn the cooker down add spices and let the quinoa simmer till the water is separated. At the same time cut all the vegetables. When your quinoa is ready, add all the other ingredients and mix. Take a plate, put your lovely warm salad on top of it and garnish with vegan mayo and basil. Also, it is really good served cooled on the next day.
