What is Polenta?
Polenta is usually made from yellow corn. The corn is coarsely ground into cornmeal to make polenta. Finer grinds make a soft polenta while coarse grinds make a firm polenta.

Preparation time: 50 minutes
4 cups water (200 ml)
1 cup of polenta (55 g)
1 cup vegan cheese (60 g)
1 tbsp coconut oil
3 g salt
Optional topping per person:
30 g vegan minced meat
Bring water to a boil in a pot. Add in salt and then pour polenta slowly into boiling water. Whisk constantly, until all the polenta is stirred in. Reduce heat to low and simmer. Stir often, until the polenta starts to thicken. Then cover the pot and cook for about 30 minutes. Stir it every 5 to 6 minutes. Polenta is done when the texture is creamy, and the individual grains are tender. Turn off the heat and mix in oil and vegan cheese. Cover the pot with a lid. Let it sit for 5 more minutes. Meanwhile, heat your pan. Warm-up your vegan minced meat. Take a nice bowl and add everything to it. Serve this dish on a Saturday night. Your family will love it!
