Serving size per person 20 g


Preparation time: 20 minutes


Ingredients:

200 g wild mushrooms

200 g eggplant

30 g soy yogurt

20 g sunflower seeds

20 g onion

20 g oil

10 g nutritional yeast

7 g lemon pepper

5 g salt

5 g chili pepper


Optional:

bread (extra 70 kcal)


Directions:

Wash your eggplant and then cut it in pieces. Take your onion and cut it in cubes as well. Now heat the pan, but a little bit of oil on it and then fry the onion and eggplant. When onions are golden, and eggplant is soft, add spices. Turn off the cooker. Put mushrooms in a food processor. Cut til you get small pieces. Then add all the rest of the ingredients. Let the food processor do its magic until you get a creamy paste mixture. Let it cool down a little bit and then transport it to a jar. Set the jar in the refrigerator. You could eat it right away, but it's tastier when it has been in a refrigerator for about 10 minutes. Take a slice of bread and spread the paste on it. You could also add some cucumber, radish and a pinch of salt.
