Guilt-free apple pie

Cake serves 8 small pieces.

Preparation time: 45 minutes


Ingredients:

Filling

100 g pumpkin

4 large apples

1 carrot

50 g Bon soya tofu

1/2 cup of sugar ( if you don't like sugar you can use 3 tbsp maple syrup)

2 tbsp cinnamon powder

1/2 tsp salt

1 tbsp cardamom powder


On top

200 g rolled oats

1/2 cup of sugar ( if you don't like sugar you can use 3 tbsp maple syrup)

2 tbsp cinnamon powder

2 tbsp citric acid

2 tbsp coconut oil


Curd cream

50 g Bon soya tofu

1 large banana

2 tbsp sugar ( or maple syrup)

100 ml water


Optional toppings:

Vegan chocolate buttons

Direction:

Heat your oven 200 °C. Take your apples, pumpkin, carrot peel and cut them. Add them in your oven bowl and mix in the spices. Now take a separate bowl and mix together oats, oil, cinnamon, sugar(or syrup) and citric acid. Now top the oat mix with filling mix, cover the top and set in the oven for 20 minutes. Let's make the curd cream. Put tofu, banana, sugar (or syrup) in the food processor. Mix well and add little by little the water, till you get a creamy consistency. Set the cud cream in a separate bowl and then in the refrigerator. After 20 minutes take off the lid on the oven pan and cook 10 more minutes. Take out your cake, cool it down. Serve on a plate, top it with curd cream and vegan chocolate buttons. Just eat it!
