Chickpea omelet

Chickpea omelet


Preparation time: 20 minutes


Ingredients for the omlet:

30 g chickpea flour

50 ml almond drink

100 ml water

10 g oil

5 g nutritional yeast

2 g salt

5 g turmeric powder

100 g broccoli

2 piece fresh chili pepper

40 g napa cabbage


Optional topping:

10 g Black sesame seeds


Ingredients for sauce:

50 g mushrooms

20 g tomato paste


Directions:

Take a large bowl. Add in it the chickpea flour, salt, turmeric powder, nutritional yeast, and mix. Now add oil and mix. Add almond drink and pit by pit the water. Consistent should be similar do regular omelet, if it's not then add more water. Heat your pan to medium heat and then fry your broccoli. When broccoli is cooked, then set it into another bowl. Now add your omelet mixture onto the pan. Fry it until you see the top becoming almost firm and then put broccoli on it. Let it cook 3 more minutes and then flip it. On another pan heat the pan and cook the mushrooms with tomato paste. When the sauce is ready the omelet will be ready as well. Turn off your cooker and start cutting the cabbage. Plate it well, by putting cabbage on one side with the chili peppers and to the other side your delicious omelet. Top the omelet with sauce and sprinkle on the sesame seeds.
