Recipe for 2
350 g of cauliflower
100 g of chickpea flour
1 tablespoon oil
1 tablespoon pizza seasoning
1 teaspoon of salt
100 g canned champignons
80 g marinated artichoke
50 g of arugula
30 g sun-dried tomatoes
4 tablespoons tomato paste
2 tablespoons coconut milk (fat 17%)
1 tablespoon of yeast
2 teaspoons tapioca starch
with a pinch of salt
Wash the cauliflower and remove the stem. Put the cauliflower in a food processor and crush it into small pieces. Take the pan and fry the cauliflower mass for 5 minutes. Then add the cauliflower mass, chickpea flour, oil, pizza seasoning and salt to the bowl. Mix well. Preheat the oven to 200 ° C. Take the baking tray and place the baking paper on it. Place pizza dough on the baking paper, using your fingers to press the dough into the shape of a pizza. Put the pizza base in the oven for 40 minutes.
At the same time, prepare the cheese sauce. Put the pot on the stove and place a tablespoon of the solid part of the coconut milk into the pot. When the coconut milk is melted add salt and starch. Mix with a wooden spoon. When the consistency has become sticky and starts to stick to the wooden spoon, turn off the stove. Add the yeast and mix again.
In the meantime, check the pizza to make sure it is not too dry. When the pizza has turned brown, remove from the oven. Spread tomato paste on the pizza. Add sun-dried tomatoes, artichoke, mushrooms and cheese sauce. Place in the oven for 20 minutes. After that, turn the oven off, grab the pizza and let it cool for a few minutes. Place the arugula on top of the pizza and then cut the pizza into slices. Bon Appetit!
